often when i am done grilling dinner,
there are a lot of coals left over,
when i have one,
i throw a whole eggplant on the grill
cover it,
turn it a few times
and roast it until it is soft.
then i make a spread with it...
Saturday night
i saw this post on IG
and realized i had forgotten
all about my poor eggplant
only the smallest bit was salvageable

these are the ingredients i use in the spread:
2 pounds medium-size eggplants
1 teaspoon kosher salt
3 garlic cloves, minced
2 tablespoons lemon juice
3 tablespoons extra-virgin olive oil, plus more for garnish
½ cup plain whole yogurt
1 teaspoon crumbled dried mint
1 tablespoon pomegranate molasses, optional
1 tablespoon roughly chopped mint, for garnish
1 tablespoon roughly chopped parsley, for garnish
Red pepper flakes, for garnish
