mixed the uni
that had been blended with oil & labneh
(a ricotta like Middle Eastern cheese made from strained yogurt)
into the risotto
topped with parmesan and nori

do you remember that on the way to see you
when leaving valencia,
we bought some uni in their shells
and then after driving about an hour
stopped at a beach
cracked them open
washed them in the ocean
and had a picnic?
